Ox & Old Cow Dry Aged  “Cárnicas El Capricho” (ES)

Our cattle from El Capricho come from very old Iberian breeds, inheriting a hardiness and resistance, which allows them to withstand the few pastures and the adverse climate of the area. Native breeds that have arrived intact over time, without genetic manipulations and without the current demands of productivity and efficiency, which is why these cattle offer curved shapes, with lots of meat and healthy fat.

Mature (at least 4 years old), huge animals, with a wide chest and narrow legs, somewhat corcovado, ideal for accumulating fat, offering essences and sensations of the past, which we thought we had forgotten.

Pampered every day and fed naturally in the wild, Jose Gordón always protects them, above all the characteristics of a breed.

For our farmer, the ox is a magical, almost mystical animal and the cow, an individual with perfect morphology for the accumulation of quality fats, coming to understand and comprehend them.

Some of the breeds we offer: Cachena, Tudanca, Alistana sanabresa, Sayaguesa, Rubia Gallega, Asturiana de los valles, Asturiana de la montaña, Parda de la montaña, Vianesa, Barrosa, Frisona, Freiresa, Maronesa, Ramo Grande, Avileña, Minhota and Terreña, as well as some crossbred specimens that usually give incredible results.

Fresh Truffles

This fungus with it’s penetrating aroma was used by the ancient Egyptians. It grows underground and is a highly prized and sought-after gastronomic delicacy.

Our fresh wild truffle has no chemical components, it is supplied by order, and hunted for our  clients by trained specialist dogs. Our cultivated truffles are also additive-free and both varieties  are delivered first to us for supervision of quality and freshness.

The price is weekly and according to the market.

Saffron

There are references to the usages of this spice dating back to 2.300 BC, and in the Middle Ages it was cultivated in the Iberian Peninsula, probably introduced by the Arabs.
The main use of this spice is gastronomic. It is used in small quantities and as a condiment. Spain is currently the second largest producer in the world and has a protected designation of origin “Azafrán de La Mancha”.

 

Saffron PDO “Saffron from La Mancha” (ES)

We import this spice directly from a family run company with its own farm. For several generations this farm has been dedicated to the planting, collection, harvesting, roasting and packaging of saffron.

Their traditional and artisan knowledge acquired from their ancestors and their daily know-how, have allowed them to obtain year after year a saffron of the highest quality.

Anchovies

A variety of fish called bocarte (commonly called anchovies). They are found in the coastal waters of the Mediterranean Sea and the Atlantic, Pacific and Indian Oceans, and also in large fresh and saltwater lakes, in temperate warm waters.

Anchovy from Santoña (ES)

They are considered the best on the market from the Cantabrian Sea and are known as the king of anchovies. Cantabrian sailors take special care with the fishing and traditional preparation to conserve the fine qualities of this fish. The preparation of the anchovies for their subsequent preservation in tins is a delicate and painstaking artisanal work.

Olive Oil

It is a vegetable oil and Spain produces almost half of the world’s olive oil, followed by Italy and Greece. The facility where the oil is processed is called an olive press (almazara). Its main use is culinary, although it has also been used for cosmetic and medicinal purposes, among others.

Extra Virgin Olive Oil (EVOO)

This is the highest quality oil. The lower percentage of acidity is the main indicator of EVOO quality.

It follows the same parameters as extra virgin olive oil (EVOO) in terms of the methods used to obtain it.

Rice

It was introduced by the Muslims in the Iberian Peninsula in the middle ages. Cultivated almost immediately in the Valencian Community, as the characteristics of its coastline are ideal, with marshes and wetlands that can be easily flooded.

It is grown in the three Valencian provinces, but mainly in the area of the Albufera natural park.

“Arroz de Valencia” is the Denomination of Origin that protects and identifies rice cultivation in the Valencian Community.

The two best known rices are:

Bomba

The grain is round and pearly, with an extraordinary quality as it remains whole and loose even after prolonged cooking. It increases in size when cooked and absorbs a lot of flavour.

 Albufera

It is a natural cross between the varieties Bomba, Sénia and Bahía. It absorbs a lot of the flavour of the cooking stock and is very resistant to overcooking.

It is a group of organisms, mainly microscopic, that live in suspension in salt or fresh water and the greatest abundance is found to a depth of approximately 200 metres.

Essensaciones Butter (ES/CH)

Handmade by Essensaciones with Swiss butter and 25% fresh truffle that is usually seasonal. It is vacuum-packed in a glass jar and is 100% natural.

James developed many recipes and gained much experience the making of ice cream in his restaurant “El Plëgat” in San Juan de Alicante (Spain). All our ice creams are either created by him, or they are all-time favourites to which he has added his own personal touch,

Essensaciones uses only 100% natural fresh products from a nearby Swiss farm, adding the main seasoning ingredient from Spain. Our ice creams have been totally hand made in Switzerland and we believe we have achieved a spectacular final result.

Ñora (Pepper)

This is a variety of pepper and is most commonly grown in Alicante, Murcia and Catalonia, and is left to dry naturally under the sun over large areas in the countryside. It is frequently used as a dried or dehydrated condiment in countless recipes. Together with garlic strings they are often used as decoration in Spanish kitchens and restaurants.

Ñora Collective Trademark ‘Ñora de Guardamar del Segura’ (ES)

It has been grown in this area for 150 years. The ‘Ñora de Guardamar’ differs from the rest in the drying process: it is dried in the famous sand dunes of the area which give the ‘ñora’ the flavour and aroma of their climate. The drying process lasts between 15 and 25 days, so it is not only dehydrated, but also fermented, creating a unique and essential condiment, unlike anything else and used in a wide variety of recipes.
